THE BRINE CALCULATOR
Salt percentage is one of the most critical variables in lacto-fermentation. Too little and the wrong bacteria thrive. Too much and fermentation stalls. The brine calculator takes your jar or crock volume and your target salt percentage — typically 2% for mild ferments and up to 3.5% for longer projects — and gives you the exact weight of salt and water to use. It works in grams and millilitres so there is no unit conversion guesswork.
