New to the workshop? OjilvantoKez has two banks: one for turning raw maple sap into syrup, and one for souring a base into vinegar. Each bank is a numbered worksheet. You type your own measurements into the boxes and the panel below solves the run as you go.

What does the Sap Bench deliver? Enter the number of trees, the average trunk diameter, the sugar reading of your refractometer, the run length and your evaporator speed. It returns the taps that these logs can safely support, the sap that can be expected daily and throughout the season, the boiling ratio according to the Jones Rule of 86, the volume of finished syrup and the hours required for cooking.

And Kraft Bank? Enter the batch volume, an alcohol or sugar base, its starter proportion and acidity, the strength you want to bottle and the barrel temperature. It addresses potential acidity, grain strength, how much live mother to pitch, any dilution needed to achieve the target, and a dated souring schedule through bottling.

Where do the answers go? Each solution is saved to a shared ledger where the result is kept alongside the measurements you typed. A reference section collects the rules of thumb on which both banks run.
