Rollmeup Creamery

Rollmeup Creamery is a production notebook for a small ice cream kitchen, following the day from mix to churn to freezer.

The churn log records each batch with a flavour, a base, the churn minutes, the overrun and the yield, and opens into a batch page for notes. The mix balancer takes ingredient weights for milk, cream, sugar, milk powder, yolk and the other solids, computes fat, sugar and total solids per hundred grams and sets the figures against the classic target bands, so a mix can be corrected before it reaches the machine; a balanced mix can be saved under its own name.

The flavour library keeps the house recipes with their ratios and method and lists the batches churned from each. The freezer screen takes twice-daily cabinet temperatures and draws each cabinet's line against its safe band, marking the readings that stray outside it.

The overrun screen compares the weight of mix and of finished ice cream in the same cup and returns the percentage on a gauge, with a short history of recent checks.
