Pelkan Cellar

Pelkan Cellar is a pocket cellar log for restaurant kitchens that store Mediterranean pantry goods by batch and best-by.

Log every arrival the moment it lands on the shelf — item name, batch date, shelf-life weeks, lot weight, optional purchase price. The Cellar tab orders your batches by remaining weeks ascending so the most-imminent lot is always at the top. Tag each batch by aisle (oils, vinegars, cured meats, cheeses, dry goods, ferments) and triage your cellar before the next service.

The Calc tab gives you two kitchen workhorses. Yield converts a gross arrival weight, a trim or loss percentage and a target portion grams into net usable weight, portion count and cost per portion. Convert lets you move freely across kilograms, liters at any density (olive oil 0.92, balsamic 1.10, water 1.00, custom) and portion counts at any portion weight — all three readouts update live as you change one.

The Tasting tab is a private logbook for what each batch is doing on the palate. Pick a batch from the cellar, score it 1 to 5, leave a note up to 280 characters. Your notes group by batch so an opened keg of vinegar shows you every taste check, oldest first.
