Tap the + button and start writing. Give it a title if you want, or don't. Tap Done and it saves itself. Your notes line up newest-first, each showing a short preview and when you last touched it. Tap one to keep editing, or hit the trash icon to throw it away. Start an empty note and change your mind? It just disappears. No clutter, no confirmation dialogs nagging you.

Every note lives in a plain database on your phone. There's no cloud, no login, no syncing to somewhere you can't see. It works the same on the train, on a plane, or with the SIM pulled out.
