Less beneficial factors in excess — energy density, saturated fat, total sugars, and sodium — lower it. Foods strong in beneficial nutrients and low in the rest earn an A. Foods that reverse this balance earn a D or E.

A wholegrain bread rich in dietary fiber and low in sodium scores better than a white sandwich loaf with added sugar and preservatives.
