多以海鲜为主。 海南菜经历两千多年的发展，源于中原餐饮，融汇闽粤烹艺，吸收黎苗食习，引进东南亚风味，形成中华烹饪王国一支年轻而又具有鲜明特色、颇有发展前景的地方菜系。 保持食品用料的原汁原味是海南菜的传统特色，但在海南菜系也可以找到其他地方菜系的影子，其中还夹杂着一些黎族、苗族等少数民族的山野气息和东南亚的风情。
